A proper Belfast bap is baked big enough that one roll, split and filled, is a full meal on its own.
This oversized, softly floured white roll is split and stuffed with anything from a fry-up to sliced meats and cheese, sold from bakery counters and takeaway vans across the city. Its dusty, pale crust and pillowy crumb set it apart from a standard bread roll.
Why it's made this way: Bakers scaled up the everyday bread roll to make an affordable, filling lunch for dock and mill workers who needed something substantial to carry with them.
