Unlike a Cornish pasty, a proper bridie has no potato in it at all — just seasoned beef, onion and suet folded into a half-moon of pastry.
Minced or hand-chopped steak is mixed with onion and suet, sealed inside a semi-circle of shortcrust pastry, and baked until golden. Bakers in the Angus town of Forfar have sold them warm from the counter for generations as a portable lunch.
Why it's made this way: It developed as a farm and market-town food for workers who needed something substantial and mess-free to eat with their hands during a break.
