Instead of the usual small puddings served beside a roast, this version is baked as one giant sheet and used like a tortilla, rolled around a whole roast dinner.

An oversized Yorkshire pudding batter is baked in a wide pan until crisp-edged and pliable, then wrapped around roast meat, stuffing, vegetables and gravy like a burrito. It's a fixture of markets in Leeds and other Yorkshire towns, handed over piping hot and gravy-leaking.

Why it's made this way: Market traders reworked the traditional Sunday-roast side dish into a handheld format so a full roast dinner could be eaten on the go.
