In Sheboygan, ordering a brat the wrong way can start an argument — locals insist on a hard roll, not a hot dog bun, and butter instead of ketchup or mustard as the base condiment.

A grilled bratwurst is served on a hard semmel roll with a swipe of butter, raw onion, and mustard, often after being simmered in beer first. Brat stands and Friday fish-fry taverns across eastern Wisconsin serve them at every summer gathering.

Why it's made this way: German immigrants settled Sheboygan in the 1800s and built the city's bratwurst culture, cementing it as 'the Bratwurst Capital of the World.'
