Uruguayans are among Latin America's biggest hot dog eaters, and the loaded 'pancho especial' comes piled with mashed potato salad and olives instead of just ketchup and mustard.
A pancho is Uruguay's take on the hot dog: a long frankfurter in a soft bun, sold from small streetside carts called carritos that appear on nearly every Montevideo corner by evening. Classic toppings include mayonnaise, mustard, and salsa golf, while the loaded 'especial' adds mashed potato salad, olives, bacon, or melted mozzarella.
Why it's made this way: Uruguay's cattle-and-dairy-driven food culture, combined with strong Italian and German immigrant influence on sausage-making, helped popularize the hot dog cart as a fast, cheap alternative to a full asado.
