Chalop

It sits somewhere between a drink and a cold soup — yogurt thinned with ice water and loaded with diced cucumber, radish, and fresh herbs.

Chalop is a chilled yogurt drink whisked with cold water until smooth, then stirred with diced cucumber, radish, spring onion, and herbs like dill and cilantro. Rooted in Central Asia's nomadic dairy traditions, it's enjoyed across Uzbekistan through the hottest summer months, often ladled from a big bowl at family tables and roadside chaikhanas.

Why it's made this way: It remains one of the simplest, most effective ways Uzbeks beat the region's scorching summer heat, passed down from rural, nomadic-rooted cooking.
