Whole heads of garlic go into the pot unpeeled, and one cauldron can feed hundreds of people at once.
Plov is rice cooked in a wide cauldron called a kazan with fried meat, carrots, onions, and whole garlic bulbs, layered so the rice steams in the rendered fat and juices. It's ladled fresh from massive pots at market food courts and dedicated 'plov centers.'
Why it's made this way: Cooking rice this way in one enormous shared pot made it possible to feed large numbers of people cheaply and quickly, which is why plov became the dish of weddings, celebrations, and communal gatherings.
