The prized version is 'hai đầu da', boiled pork sliced so each piece has skin at both ends.

A plate of thinly sliced boiled pork, rice paper, herbs, cucumber and green banana arrives and diners roll their own, dipping each roll in thick mắm nêm (fermented anchovy sauce).

Why it's made this way: A Da Nang signature with roots in neighbouring Đại Lộc (Quảng Nam), sold at Chợ Cồn and eateries across the city.
