There is no soup: the pungent mắm nêm arrives separately and you pour it over and mix the bowl yourself.
Rice vermicelli topped with sliced pork, nem chua (sour pork) and chả, with boiled young jackfruit, shredded papaya, cucumber and herbs, all dressed with anchovy sauce, garlic and chili.
Why it's made this way: Mắm nêm is the defining condiment of central Vietnam, and this noodle bowl built around it is one of the dishes Da Nang is best known for, sold in markets such as Chợ Cồn.
