Unlike the long, thin spring rolls elsewhere in Vietnam, these are folded into squares, like a tiny bánh chưng.
Rice paper packed with sea crab meat, minced pork, egg, mushrooms, bean sprouts and glass noodles, deep-fried until crisp and eaten with fresh rice vermicelli, herbs and dipping sauce.
Why it's made this way: Hai Phong's coast supplies the sea crab that defines the roll; it has spread to Hanoi and Saigon but is still sold as a Hai Phong speciality.
