In August 2024, Vietnam's Ministry of Culture, Sports and Tourism officially added mì Quảng to the national list of intangible cultural heritage — recognition for a noodle dish still ladled out from plastic stools on the roadside.

Flat rice noodles tinted yellow with turmeric are topped with a small pool of intensely reduced broth, shrimp or chicken, herbs, and a single roasted rice cracker for crunch, rather than being fully submerged like most Vietnamese noodle soups. It's the everyday noodle dish of Quảng Nam province, sold from Hội An's market stalls to roadside shacks.

Why it's made this way: The dish originated in the Đà Nẵng and Quảng Nam area, where turmeric-tinted rice noodles topped with a shallow, concentrated broth became the everyday noodle of the region — distinct in form from the fully-submerged noodle soups found elsewhere in Vietnam.
