Legend has it these grubs were once sent to the Nguyễn royal court as a tribute delicacy prized enough for an emperor's table — though, like much of the Mekong Delta's food lore, the story is passed down rather than documented.

The plump, cream-colored larvae of the coconut palm weevil are pulled live from the trunks of dying coconut trees, then grilled, deep-fried, or eaten still wriggling in fish sauce. Mekong Delta markets, especially around Bến Tre's coconut groves, sell them as a prized, faintly sweet delicacy rather than a novelty.

Why it's made this way: The grubs have been eaten across the coconut-growing Mekong Delta for generations, and are so tied to Bến Tre's identity that authorities have restricted farming them on purpose, since raising the larvae deliberately kills the coconut trees they infest.
