Bún Lá Cá Dầm

There is no fish called 'dầm': the word describes how the fish is steeped in the broth to sweeten it.

A clear, non-oily broth of sea fish such as mackerel or tuna over bún lá, thin rice noodles pressed into small rounds and laid on banana leaf, sold as a breakfast bowl from stalls and shoulder-pole vendors.

Why it's made this way: A speciality of Ninh Hòa and Nha Trang on Khánh Hòa's fishing coast; the bún lá noodles come from Thạnh Mỹ village in Ninh Hòa.
