The jellyfish stays crunchy in the hot soup, giving the bowl a texture more like cartilage than seafood.

Rice vermicelli in a light, clear fish broth topped with pieces of jellyfish and usually fish cake, served with herbs and greens at noodle stalls across the city.

Why it's made this way: Made with jellyfish from local waters, it is counted with nem nướng as one of Nha Trang's signature dishes.
