Nem Nướng Ninh Hòa

The thick dipping sauce is cooked, not just mixed: recipes include glutinous rice, soybeans and minced pork.

Pounded seasoned pork moulded onto bamboo skewers and grilled over charcoal, then rolled at the table in rice paper with herbs, cucumber, green mango and a strip of crisp fried rice paper.

Why it's made this way: Named for Ninh Hòa, a town in the north of Khánh Hòa province, where it is a long-established local speciality.
