Its main ingredient, the aconite (monkshood) root, is poisonous raw; cooks soak and simmer it for hours before it is safe to eat.

A thick, bitter rice porridge cooked with mashed aconite root and pork-bone broth, topped with minced pork and herbs, sold at night from porridge stalls in Hà Giang, Đồng Văn and Mèo Vạc.

Why it's made this way: A traditional Hmong recipe from Hà Giang, eaten in the evening as a warming dish for cold mountain nights.
