Some villages ferment it with a specific local herb-and-root yeast cake passed down within families, so the same corn recipe can taste noticeably different from one hamlet to the next.

Corn is fermented with a traditional yeast cake and distilled into a clear, strong spirit, typically served in small cups at market stalls and family meals across the northern highlands. It's a fixture of weekly market days, where traders and travelers alike stop to drink a round before heading back up the mountain.

Why it's made this way: Corn wine is a signature product of H'mong communities in Hà Giang and the surrounding limestone plateau, where corn grows better than rice on the steep, rocky terrain, and towns like Mèo Vạc and Bắc Hà are particularly well known for it.
