Quy Nhơn makes its own fish cakes for the bowl, mostly from local mackerel and barracuda, and many shops serve them both steamed and fried.

Chewy, thick bánh canh noodles in a light, peppery broth simmered from fish bones, topped with sliced fish cake and green onion. Sold at street stalls and small shops around the city, often as breakfast.

Why it's made this way: Quy Nhơn is a fishing port known across Vietnam for its chả cá, and bánh canh chả cá is one of the city’s signature bowls, with stalls clustered on streets such as Ngô Văn Sở.
