It is really three dishes in one order: woven rice noodles, rice porridge and a plate of pork offal, eaten separately or together.

Bundles of fine rice vermicelli woven into rectangles and topped with scallion oil, eaten with sliced pork intestine, liver and heart, herbs and a bowl of warm congee; mostly a morning meal.

Why it's made this way: Quy Nhon's signature breakfast, sold at early-morning shops across the city and singled out by food writers as one of its defining dishes.
