Dried mopane worms are nearly 60% protein by weight — pound for pound, richer than most cuts of beef.

Madora are the dried caterpillars of the emperor moth, sold by the cupful in markets and at roadside stalls across Zimbabwe. Vendors rehydrate them and fry them with onion, tomato, and chili until crackling crisp, served as a snack or protein-packed side for sadza.

Why it's made this way: Harvested in bulk during the rainy-season mopane moth boom and easily sun-dried for storage, the worms became a reliable, affordable protein source long before refrigeration or year-round meat supply were common in rural Zimbabwe.
