Bourek are thin pastry sheets rolled around a filling — usually spiced ground meat, mashed potato, or a mix with egg and cheese — then deep-fried until deeply golden and shatteringly crisp. Algiers stalls sell them stacked hot in paper, a favorite quick lunch or Ramadan starter.

Why it's made this way: Bourek's crisp, portable format made it a default festive and everyday snack across Algeria's cities, with Algiers vendors turning it into an all-hours street staple sold from corner kiosks.
