Every strand is hand-rolled and cut from a single sheet of dough — no machine and no dried pasta, just a technique passed down between generations of Algiers cooks.

Rechta is a fine, hand-cut noodle made from a soft wheat dough rolled paper-thin, then steamed rather than boiled. In Algiers it's classically topped with a white sauce of stewed chicken, chickpeas, and turnips, fragrant with cinnamon and white pepper.

Why it's made this way: Rechta is considered the symbolic dish of Algiers cuisine, prepared for Eid and other family celebrations, with the noodle-cutting technique treated as a mark of a skilled home cook.
