Constantine's version swaps the usual semolina sheets for pieces of torn baked bread — a twist so specific to the city it has its own name, chakhchoukha dfer.
Chakhchoukha tears thin sheets of semolina dough (rougag) — or in Constantine's dfer version, pieces of baked bread — into small pieces and soaks them in a rich, spiced tomato-based meat sauce flavored with butter and herbs.
