Rfiss

There's no baking at the final stage — stale bread is crumbled by hand and worked together with dates and spice entirely by feel, no recipe needed.

Rfiss crumbles day-old bread or kesra by hand and kneads it together with softened dates, butter, and warm spices like cinnamon and aniseed into a dense, sweet paste, sometimes pressed into a mound and drizzled with more date syrup.

Why it's made this way: It began as a resourceful way to use up leftover bread, turning a humble kitchen habit into one of Constantine's favored teatime sweets.
