Chtitha is a whole family of dishes — chtitha djej with chicken, chtitha lham with meat, chtitha batata with potatoes — all built on the same derssa-and-tomato red sauce.

Chtitha batata simmers potatoes in a red sauce built on derssa (a garlic and chili paste), tomatoes, and warming spices until the potatoes turn deep orange and soak up the heat. This meat-free version is a favorite everyday dish across Algeria.

Why it's made this way: As an accessible, meat-free variant within the wider chtitha family, it's a common weekday meal in Algerian households, served with bread for scooping up the thick sauce.
