Maghlouga

Its name literally means 'closed' or 'locked' — a nod to how a savory meat filling gets sealed shut between two layers of soft dough before it hits the pan.

Maghlouga sandwiches a filling of spiced ground meat, onion, carrot, and cilantro between two rounds of soft, semolina-and-flour dough similar to msemen, then cooks the sealed parcel on a hot griddle or tajine until both sides are golden.

Why it's made this way: It's a signature specialty of Ghardaïa and the nearby town of Beni Isguen, reflecting the Mzab valley's own spin on the flatbread traditions found across Algeria.
