It was invented at a single Oran ice-cream shop, and the recipe's core trick — whipped egg white folded into lemon syrup — needs no ice-cream machine to turn out light and snowy.

Créponné is a lemon sorbet whisked from beaten egg whites, sugar syrup infused with lemon zest, and fresh lemon juice, churned or hand-beaten until light and airy. Vendors and corner shops across Oran sell it in cups during the hot months as an icy, tart refresher.

Why it's made this way: Invented in French-era Oran by Gilbert Soriano at the Crèmerie l'Oranaise, créponné became a beloved pied-noir specialty that Algerian families kept making long after independence, carrying it into the city's own culinary identity.
