Chipá

Chipá — street food from Misiones, Argentina

The dough uses almidón de mandioca, starch from cassava, and no wheat flour at all; the chewy texture comes from the starch and cheese.

A small, chewy roll made from cassava starch and cheese, baked until the crust cracks and the inside stays gummy and rich. Sold warm from baskets by roadside and terminal vendors across Misiones province.

Why it's made this way: Chipá comes from Guaraní culinary tradition shared across Misiones and neighboring Paraguay, a border-region food identity distinct from the rest of Argentina.
