Locro predates the Spanish conquest entirely — it's a pre-Columbian Andean stew that Argentina later adopted as its unofficial dish for the May 25 Independence Day holiday.
A thick stew of hominy corn, white beans, squash, and various meats, simmered for hours and ladled from huge pots at street stalls during Salta's festivals and market days. A layer of spicy 'quiapo' relish (paprika oil with scallion) is spooned on top at serving.
Why it's made this way: Salta's position within the former Inca empire's southern reach preserved this Andean corn stew as a still-living local tradition rather than a purely symbolic national dish.
