Salta holds dedicated tamale fairs during Easter Holy Week, when the city's street stalls sell almost nothing else for days at a stretch.
Corn dough stuffed with seasoned beef or chicken, wrapped in dried corn husks and steamed in bundles, sold hot from pots at street stalls and market corners across Salta. Vendors tie them in pairs so buyers carry a matched set home.
Why it's made this way: Salta sits in Argentina's Andean northwest, where pre-Columbian corn-based cooking survived Spanish colonization far more intact than in the rest of the country.
