The traditional filling in Argentina's northwest often uses charqui, sun-dried beef, a preservation method the Andes relied on long before the Spanish arrived.

Corn dough stuffed with seasoned beef, wrapped in dried corn husks and steamed in bundles, sold hot from pots at street stalls and market corners across Salta.

Why it's made this way: Salta sits in Argentina's Andean northwest, where pre-Columbian corn-based cooking survived Spanish colonization far more intact than in the rest of the country.
