The juice is sold right beside Tucumán's 19th-century sugar mills ('ingenios'), some of which still stand as working landmarks of the boom that built the province's economy.
Sugarcane stalks pressed on the spot into a pale, foamy juice, served over ice by street vendors near Tucumán's sugar mills and town markets. It's cheaper and more common here than almost anywhere else in Argentina.
Why it's made this way: Tucumán's 19th-century sugar industry boom, still visible in its old mills, keeps raw cane juice a genuinely everyday street drink tied to the province's core industry.
