Tucumán is nicknamed 'El Jardín de la República' ('the Garden of the Republic') largely because of the sugarcane industry that produces the syrup drizzled over this exact snack.
A fresh, mild white cheese served in wedges and drenched in dark, thick cane syrup, sold at roadside stands and market stalls across Tucumán as a simple dessert or afternoon snack. The sweetness of the syrup is meant to cut against the cheese's tang.
Why it's made this way: Tucumán has been Argentina's main sugarcane-producing province since the 19th century, making cane syrup a defining local sweetener found on this dish almost nowhere else in the country.
