Australia has the highest per-capita meat pie consumption of any country in the world.
A hand-sized pastry shell filled with minced or diced beef and gravy, the meat pie is sold hot from bakery ovens, service-station warmers, and footy-ground kiosks across the country. It's eaten straight from a paper bag, usually with tomato sauce squeezed through a hole punched in the lid.
Why it's made this way: Pie sellers were working Australian streets by the early 1800s, pouring gravy into pastry through a thumb-hole for passing crowds. The pie's status as one-handed, portable food later fused with Australian Rules football, where pie-and-sauce concessions have been a matchday fixture since the 1920s.
