Melbourne has long been described as home to the largest Greek-speaking population of any city outside Greece, a legacy of the postwar migration wave that built suburbs like Oakleigh, now nicknamed 'Little Athens.'
Grilled pork or chicken is shaved off a spit and stuffed into pita with tomato, onion, tzatziki and chips, wrapped tight in paper to eat one-handed. Souvlaki bars line streets across Melbourne, with the Oakleigh strip treated by locals as the benchmark.
Why it's made this way: Mass Greek migration to Melbourne from the late 1950s through the 1970s built a network of Greek-run grills and milk bars, and the souvlaki wrap they served became one of the city's default fast lunches.
