Viennese slang nicknames it the 'Eitrige' — roughly 'the pus one' — for how molten cheese oozes out the moment you bite in, and locals say it with affection.

A pork sausage studded with small cubes of cheese that melt and leak out as it grills, Käsekrainer is sold at Würstelstand sausage stands across Austria, typically handed over with mustard, horseradish, and a crusty bread roll on the side.

Why it's made this way: Käsekrainer is a relatively modern invention, developed in Austria in the 1970s by adding cubes of Emmental to the Krainer sausage from Carniola, and it quickly became a Würstelstand bestseller.
