Locals in Sylhet don't even use the standard word 'shutki' for it everywhere — depending on the sub-region it's called hutki, hukoin, futki, or fukoin, one of several ways the region's own dialect quietly rewrites standard Bengali.

Dried, fermented fish is simmered with vegetables, chili, and garlic into a sharply pungent curry that pairs with plain rice. In Sylhet it goes by its own local name, hutki, and shows up in home kitchens and small eateries throughout the division.

Why it's made this way: Sylhet's own dialect terms for dried fish — hutki, hukoin, and their variants, rather than standard shutki — point to how distinct the region's food culture remains from the rest of Bangladesh, down to what people call the same ingredient.
