The name is simply 'shutki' in Sylheti pronunciation: Sylheti regularly turns the Bengali 'sh' sound into an 'h', so shutki becomes hutki.

Dried fish is simmered or fried down with vegetables, chili, and garlic into a sharply pungent curry that pairs with plain rice. In Sylhet it goes by its local name, hutki, and shows up in home kitchens and small eateries throughout the division.

Why it's made this way: Sylhet's haor wetlands produce huge seasonal fish catches, and drying the surplus has long been part of local cooking; hutki cooked with vegetables or as a dry bhuna is an everyday Sylheti dish.
