Lambic beer isn't fermented with any yeast a brewer adds — it's left open to the air so wild yeast strains that exist only around Brussels' Senne Valley can do the work themselves.

Lambic is a beer spontaneously fermented by wild airborne yeast, often blended into Gueuze by combining young and aged batches for a second fermentation. It's sharply sour and champagne-like, traditionally served in a flute.

Why it's made this way: The specific microbial population of the Brussels and Pajottenland countryside can't be replicated elsewhere, making lambic one of the few beer styles in the world truly tied to one small patch of geography.
