Chimay was the first brewery in the world to use the term 'Trappist Ale' on its labels, effectively giving the entire beer category its name.
Chimay makes a family of rich, bottle-conditioned Trappist ales — the fruity Rouge, the strong dark Bleue and the golden Blanche — all brewed by monks and sold to support the monastery. They're complex, slightly sweet beers meant for slow sipping, not quick pints.
