Tartine au Sirop de Liège

The syrup itself contains no added sugar — just pears, apples and sometimes dates, cooked down for hours until they caramelize on their own.

A thick slice of bread spread generously with dark, almost black sirop de Liège, a slow-reduced pear-and-apple syrup, sometimes topped with a slice of local cheese. Sold at Liège's Sunday La Batte market, one of Belgium's oldest open-air markets.

Why it's made this way: Liège has grown pears and apples in its orchards for centuries, and cooking the surplus fruit down into a keepable syrup was a practical way to preserve the harvest through winter, long before it became a market snack in its own right.
