Legend has it the candy was invented by accident when a Ghent pharmacist left a batch of syrup out too long and it hardened into a shell around a still-gooey center.
A small purple, raspberry-flavored cone with a soft gum-arabic crust that gives way to a syrupy, jelly-like core. Sold by the paper-coneful from dedicated stalls and carts on Ghent's squares, especially around Groentenmarkt.
Why it's made this way: Its nickname, Ghent's 'little noses,' comes from its shape, and the long-running rivalry between the city's handful of cuberdon vendors over the best cart spot has become local lore in its own right.
