Cayo's cattle ranches, many run by Mennonite farmers, supply much of the beef sold in Belize, making this hearty soup a direct taste of the district's ranching economy.
Beef and bones are simmered for hours with corn, yuca, plantain, and chayote into a hearty, clear broth. Market stalls in San Ignacio and Benque Viejo ladle it into bowls with lime and tortillas on the side.
Why it's made this way: Cayo's savanna and river valleys make it Belize's cattle country, and this beef soup is the everyday market food that comes from that ranching landscape.
