A proper marquesita is rolled around shredded Edam cheese, a quirky pairing with sweet toppings that traces back to Yucatan's own Dutch cheese imports.

A thin, crisp crepe cooked on a special iron griddle, filled with shredded cheese and drizzled with condensed milk, Nutella, or fruit syrup, then rolled up. Night carts near Corozal's plaza sell them fresh off the griddle.

Why it's made this way: Corozal sits just minutes from the Mexican border, and this Yucatan night-market treat has crossed over to become a popular evening snack in the district's own town square.
