Chaya leaves are mildly toxic raw and must be cooked before blending, a preparation step passed down through generations of Yucatec Maya cooks.

Cooked chaya leaves, a Yucatec 'tree spinach,' are blended with pineapple juice, lime, and sugar into a bright green, refreshing drink. Juice carts around Orange Walk Town sell it cold from large jugs.

Why it's made this way: Chaya is a Yucatec Maya staple green, and Orange Walk's Mestizo community, rooted in Yucatec migration, kept the plant and its juice as part of everyday local drinking culture.
