Traditional longaniza is stuffed and hung to dry for days before it's ever grilled, a curing step most other Belizean sausages skip.
A long, thin pork sausage seasoned with achiote, garlic, and vinegar, grilled or fried until the casing crisps. Vendors in Orange Walk's markets slice it onto plates with rice and tortillas.
Why it's made this way: Longaniza came north with Yucatec Maya settlers who founded Orange Walk's Mestizo communities, and it remains one of the clearest surviving traces of that Yucatecan food tradition.
