The dish is built around ijodo, a yellow-fleshed watermelon, cooked down with sugar and sun-dried maize kernels into a naturally sweet porridge with no added spice.

Yellow watermelon is stewed with sugar and rehydrated sun-dried maize until it breaks down into a soft, sweet dish. Traditionally prepared by Kalanga and Ndebele families around Francistown for lunch after the winter harvest, it's a seasonal treat rather than a year-round staple.
