The bream on Kasane's menus is often farmed just outside town, at an aquaculture project on the banks of the Chobe River itself, though wild river bream is eaten too.

Fillets of bream are coated in sesame seeds and pan-fried until crisp, then plated with pap and a spicy chakalaka relish. It's become the go-to fish dish at lodges and restaurants along the Chobe riverfront in Kasane, prized as a fresher, local alternative to imported seafood.

Why it's made this way: With the Chobe and Zambezi rivers meeting nearby, Kasane's cuisine leans on river fish the way inland Botswana leans on beef, and bream has become the town's signature catch.
