Unlike the plant-eating tilapia it resembles, nembwe is a predatory bream that hunts small fish, crabs and worms in the Chobe's channels, giving it a firmer, more flavourful flesh prized by camp cooks.

Freshly caught nembwe, a hard-fighting predatory bream from the Chobe River's channels, is cleaned and grilled over coals at fishing camps around Kasane, usually the same day it's caught. It's a simpler, more rustic preparation than the sesame-crusted restaurant version of Chobe bream.

Why it's made this way: River lodges around Kasane build their kitchens around whatever anglers bring in that day, and nembwe's reputation as a hard fighter on the line has made it just as prized on the plate.
