Bream is such a staple around Maun that stallholders serve it as an everyday lunch option, not a special-occasion treat, alongside beef and oxtail stews.

Bream caught fresh from the Delta's channels is scored, seasoned and marinated or pan-fried whole, sometimes finished with lemon and herbs. Local stallholders and lodges around Maun serve it simply, letting the freshness of the fish carry the dish.

Why it's made this way: The Okavango Delta's permanent waterways make fish, rather than beef, the everyday protein for many households along its edges — a striking contrast to the cattle-centred cuisine of inland Botswana.
